Our lamb is selected from the more rural parts of the countryside such as Devon, Dorset and Scotland. This ensures the grazing space and allows the lamb to feed on the lush pastures to produce flavour and quality.

Ageing of the lamb is also a very important part of producing the full flavour of the lamb. We age all of our lamb in the same way we age our beef products but not for as long. We age our lamb for 7-14 days to ensure a top quality cut of lamb.
